Instant Pot Cabbage & Navy Bean Soup

Vegetarian with a touch of Czech, this healthy soup will warm you with flavor and aroma.


2 tablespoons olive oil

2 onions, chopped

2-4 garlic cloves, crushed

1 (28 oz) crushed tomatoes

1 (14 oz) fire roasted diced tomatoes

1 quart vegetable stock

1 tablespoon paprika

1 tablespoon chili powder

1 teaspoon oregano

1 teaspoon cumin

4 cups chopped green cabbage

2 cups presoaked navy beans

2 carrots or 1 sweet potato chopped

1 russet potato chopped

1 teaspoon salt

½ teaspoon black pepper

Bay leaf

¼ cup chopped parsley

Sauté onion and garlic in olive oil on sauté setting until onions are soft. Cancel sauté. Add remaining ingredients except parsley and stir well. Seal and cook on high pressure for 8 minutes with a 20 minute release. Add chopped parsley and stir. Warm 5 minutes and serve with a dollop of sour cream. Enjoy!
